Butter-garlic fish

Light summer dinner

Our apartment is in the top of the building and has no air conditioner. After arriving Canada in the end of May, I've been through one heat wave and two really hot weeks. During the heat wave week, we watched two movies and ate salad most of nights. It's too hot to eat anything! I was surprised it could be this hot in Canada since I always thought Canada is a cold cold country and when Canadian told me it's hot, I just assumed they have no clue of what hot weather really is.

While the weather is warm but not hot, and you feel like something lighter but still want a taste of protein. Then this dish could be a good choice for you.
And it's really easy to make since fish doesn't take long to be de-frozed or cooked.

Ingredients you'll need:
Recipe is referred to Gina's recipe
  • 6 -6 oz tilapia filets
  • 4 cloves garlic, crushed
  • 2 tbsp butter
  • 2 tbsp fresh lemon juice
  • 4 tsp fresh parsley
  • salt and pepper
  • cooking spray
Preheat oven to 400°.
Melt butter on a low flame in a small sauce pan. Add garlic and saute on low for about 1 minute. Add the lemon juice and shut off flame.
Spray the bottom of a baking dish lightly with cooking spray.
Place the fish on top and season with salt and pepper. Pour the lemon butter mixture on the fish and top with fresh parsley.
Bake at 400° until cooked, about 15 minutes.

Lemon Pudding Cake

Worth to try even you don't have the right tools yet~

This desert can be served either warm or cold, so it's good for all season.
In summer time, if you need more choices of desert other than ice cream. This light flavour desert can definitely be a good choice to serve. Plus it's easy to make and hard to screw up.
These are all the reasons that I chose to give it a try today!

I chose a recipe on SlashFood.com for the first trial. Usually I choose the recipe site has better picture, that's very important ;)

Ingredients you'll need:
1 cup white sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
2 eggs, separate the yolk & white and place at room temperature for 30mins
1/4 cup lemon juice
2 teaspoon lemon zest (to use one medium size of Meyer/yellow lemon is about the right amount)
2/3 cup milk
1 teaspoon vanilla extract

Steps:
1. In large bowl, mix flour/sugar/salt
2.Add yolks/lemon juice/zest/milk/vanilla, then mix well
3. Whisk egg white in high speed in a medium bowl till it's stiff but not dry (definitely need an electric beater for this... my arm was sore but it's not quite stiff yet)
4. Then fold the egg white into the batter of 2.
5. Pour the mixture into small casserole cup container (it says 6oz *5cups in the linked recipe)
6. Place the cups into big baking pan with water. If you place more water(2-3" if allowed), you should have more moist pudding part in each cup after. Less water(1") will result more cake texture in result, I assume. I put 2" water here and used muffin tray instead of casserole cups since I don't have any.
7. Bake it for 25-30 mins until the edge turns brown on the top

Ideas:
You may sprinkle with icing sugar powder, cut a little piece of lemon, put cherries or berries besides it.
We had it with green tea with a lemon slice. It was a delightful summer night desert.
I think it's the result that the muffin tray is too big so the batter is not deep enough to have layers of textures. The specialty of this desert is the layers of taste & textures. And the moist pudding flavour is not outstanding enough, it probably has something to do with my laziness of the egg white. Next time I might try half amount of flour and baking a bit longer. 雖說沒有舊有的記憶,就沒有新鮮的體驗。但是,這樣的矛盾有時只是累了自己...

生命中什麼最重要,其實不太需要急著知道...
五年來忙碌的工作讓我遺忘了怎麼認真生活,怎麼付出真愛,怎麼待人真誠 .... 這些我被遺忘太久的感覺和時間... 在這段休憩的日子中慢慢的昇華了...
找回自己遺失的一部分是一段過程,面對這樣的失落和轉變,有些不容易。我還是想忙碌的,不過忙碌的目的清楚了.... 矛盾在所難免,人生是階段性的抉擇拼湊而成的...

再陌生,都會有融入的彼端出現的...

Berry-Banana smoothies


Since it's the berry season, we should use up the berries in fridge even when it's a little bit rotten.
Together with your banana which might have some black spots already, you should have a homemade berry-banana smoothies now!

To make a smoothie is very easy, just simply put all the ingredients in the blender and press the button till they are crashed & combined.

Ingredients you'll need for this treat:
2 middle size banana
3/4 cup mixed berries (blue/black/straw/rasp berries) >frozen berries are just as good as the fresh one in smoothies
1 tbs vanilla ice cream
1 1/2 cup milk (adjusted by personal preference)

Serves for two 500c.c. glass as picture

You may decorate with fresh berries or fresh mints before serve or picture-taken :P

Inception

Let's just say 'Christopher Nolan is a genius.'

I never like pure action movie, so this one is just perfect for me. It leads you to a status of wondering, wondering with imaginations and possibilities. There is no rule but logic. But how much we 'think' we know about subconscious? How much do we think we know about our dreams?
This doubt induced Christopher to make this movie. Through the imagination, his thoughts about subconscious was inputted in our minds and caused expected discussion and studies after. This is what you called an art. It causes ripples of new thoughts, new feelings, new creations.
For one of his old movie that I love, Memento, it was about memories. This
time, it's about dreams. Another level & challenge of trying to understand those hidden areas of human brains.

For those haven't seen the movie, you should stop right here and go checking out the movie. I believe it's that kind of movie you better have no expectation and no ideas what it's about before you watched it.

I especially like the motion parts inside when the chairs floating in the room cuz lack of gravity. And Joseph's(Arthur in the movie) fights with Fischer's subconscious in the hotel hallway. The room's special spinning way really get me obsessed with the scene. The city bends over upside down was pretty cool, too. But I liked that better in trailers. It was expected would be something big but actually not in the movie. Besides these, there are still many interesting scenes in that movie. But those are just the decorations for the movie, the best part of this movie in my opinion is the idea. The idea about dreams. The idea of a different definition to make the dreams come true.

In the mission, they fell asleep on the 1st class of the plane and started to dream.
1st level
It was raining. They joked that's the consequence of Fischer wants to go to the bathroom. The plan was to kidnap Fischer with a taxi. They asked him for the codes of his father's safe but he doesn't know. So they put him in a room together with his father's wingman who was actually Eames (one of the team member of Cobb) with make-up. I think the original plan is to inject something to let Fischer fall in sleep so they can start the next level. But out of expectation, Fischer was trained to protect ideas to be stolen in his dreams/subconscious. They ended it up have to move the hostages and got him fall in sleep in the van. So Yusuf stayed awake in this level to keep driving to the going to close bridge in order to get away from the attack from Fischer's subconscious. And to wake up and back to the reality, Yusuf will drive the van off the bridge.

2nd level (my favourite)
It's in a hotel that Ariadne decided. Fischer was sitting in the hotel bar with this lady talking to him (The lady is again, Eames with make up). Then Cobb showed up besides him telling him that it's actual a thief after the lady left. After gaining Fischer's trust, Cobb told Fischer that somebody put him in sleep and they are in his dream. He is there because someone wants to steal something from his dream. Then he though of someone was trying to ask him about the safe codes. Then he brought him to a hotel room where they fall in sleep together with Cobb's team members in order to find out what's really in his father's safe by himself.
Arthur stayed in the room to make sure the team member be woke up before their bodies felf falling' in the first level. If the sequence messed up, it may cause a tragedy that they can never wake up to reality.

3rd level
It looks like a military center in mountains. Probably because Fischer's heart feels cold by just noticed some people around him might want to steel something from him. It's heavy snow in the dream. The plan is the team will cover Fischer to get into the building and open the big safe inside to find what's in there. It turned out that it's his father in the safe on the bed dying just like what he remembered. The difference is he finally gets to hear what his father tried to say before he past away clearly this time. It was not disappointed of his son is not like him, it's disappointed of he even tried to be like his father. So Fischer's father told Fischer to be himself and told him to open the safe, it was the pinwheel he remembered in one of the very few pictures that he took with his father.

Away we go

This is a small budget movie about a couple suddenly found they have no accomplishment in their middle 30s when they are about to have a baby. So they decided to travel around States and Canada to meet their friends & family to see where would be the best place for them to move to, for the baby and for themselves as well.
So they started the journey of flying & driving. They find out all their friends have their own problems to deal with no matter their family looks either happy, weird or miserable. Finally in the end, Verona (the girl in the couple) faced the memories of her past away mother that she's been trying to avoid since she was 20. And they found their way 'home'.

The story is written by Dave Eggers & Vendela Vida. Dave is also the writer of the screenplay of the movie 'Where the wild things are'. I love that movie, too.

To compare with the movie, what I like even better is the soundtracks by Alexi Murdoch. His song shows peace, sorrow and most importantly slight happiness and hope. My favourite one is 'All my days', the main theme of the movie. Here is the lyrics & link to the music to share with you. My First 2-handfull Wild Raspberries

The other weekend we went for a walk with coca in the bushes behind the house. All the wild berries are hanging on in green. Then the next weekend, the first thing we arrived the house was to check if the berries are ready.
After repeating this for weeks, finally last Saturday I got two hand full wild raspberries! Coca wasn't too impressive with the berries. He just wanted to keep going and then come home to jump into the pond in the back yard and be a happy stinky wet dog.
Dinner time we had raspberry salad and hamburger outside. It was a sunny but windy da
y. So there was no bugs either in the bushes or back yard. The table and cabinet we were
working on were almost done. We had a great meal and hard-working Saturday.

As usual, good ideas should be written down
before you forget about it :)

Raspberry salad
Lotus, Brocoli, Mushroom, Wild Raspberry, Rasin, Peanut and Almond
Amount needs to be measured and written later
Suggest to change the Almond/ Peanut to be walnut will be better
Salad dressing would be better with olive oil/lemon juice or red wine vinegar/ salt...flavor

Berry-Banana bread

When I noticed the over ripen banana forgotten on the top of fridge,
I know it's time to bake a banana bread. :)


After practice with the recipe found online couple times, I was playing a little bit with the possible ingredients and found this one is great match of the flavours and textures.

As usual, good recipes should be written down in order to have a better chance to make it successfully again.

Ingredients you should have:
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup butter or margarine (melted in room temperature in adavance)
1 cup white sugar (you can use 3/4 cup if you prefer less sweetness)
1/2 teaspoon salt
2 eggs (medium size)
1 teaspoon vanilla
4 table spoons Yogurt (Berries flavour one is preferred)
3 small/medium size banana
1/4 Dried or Fresh berries (Blueberry & Raspberry are recommended)

Tools you should have:
Measuring cups/ spoons of course
Spoon or beater for mixing stuff up
A big size bowl
A medium size bowl to mash banana in
Baking container (23cm long rectangular shape)

Step:
-Add Butter/Sugar/Salt in the big size bowl and mix it well
-Add Eggs/Vanilla/Yogurt then beat more
-Add filtered Flour/Baking Soda/Baking Powder. Separate it to 3 times and once in a small amount and beat at the same time
-Mash Banana in another bowl then add it into the batter in the big size bowl
-Mix it well then add berries by hand to make sure it spreads average in the batter
-spray or wipe some oil or butter inside of the baking container
-Pour the batter into the baking container until the container is 80-85% full
-Place the container in the center of preheated 300F oven for 1 hour
-When the surface color reaches what you want, insert a toothpick or small wooden skewer to the center of bread and pull it out. If the toothpick stayed cleaned and dried then it's done!
-Let it cool down at least 45mins before cut

I like to check my bread every 30 mins just to make sure everything is ok. One time the banana I used was too big and the batter is way too much for my container. So the batter was like over-pured beer. It ended up cause a little bit fire frame in the bottom of the oven cuz of the burned batter....etc. Anyways, just be careful cuz shit happens...
Last time I actually baked it longer than 1 hour cuz I like the edge and surface to be a little more brown and it tasted delicious!!
